Colour Your Palate attendees awarded the People’s Choice trophy to Chef Rob Cassels of Saveur Restaurant during the 10th annual event to raise funds for the artsREACH Society.
Cassels won with his red canapé of smoked Sun Wing Farm tomato risotto cake, tomato “tartar” and dungeness crab salad.
During the culinary competition at the Victoria Conference Centre, 11 of the region’s finest chefs presented one canapé that incorporated the colour they drew one month ago.
The judges sampled each of the entries and awarded Best Tasting Savoury Creation to Cassels as well. Best Tasting Sweet Creation went to Chef Nick Waters, Toque Catering. His yellow canapé was a passion fruit panna cotta, golden beet cake, turmeric burnt honey cracker, and candied beet salad.
Chef Thomas Yesdresyski of Sooke Harbour House earned Best Use of Colour. His red canapé was a beet cured sockeye salmon, tulip and savoury shortbread bar, huckleberry glee, garden herb cream, and crispy beets.
