Bacon-Wrapped Poppers

Provided by Lepp Farm Market

This colourful appetizer hits all the right notes with sweet and spicy and makes a great appetizer for a holiday party. Removing the membranes and seeds from the peppers ensures you get just a nice, gentle heat and not a fiery kick.

Ingredients:

15 jalapeno peppers

8 oz. cream cheese, room temperature

15 slices of Lepp’s Double Smoked Bacon, cut in half

3/4 cup shredded Applewood Smoked Cheddar Cheese

1/4 cup dried cranberries

1/4 lb. Lepp’s Breakfast Sausage (approximately 3 links)

3 cloves garlic, peeled

2 tomatillos

1 roma tomato

Salt and pepper, to taste

Method:

Preheat oven to 375 degrees.

Remove the casing from the sausage links and add to a skillet pan or saute pan, and cook for 10 minutes until fully cooked. Set aside and allow to cool.

In a separate skillet or saute pan, add a splash of canola oil, halved tomatillos, roma tomato cut in half, and whole cloves of garlic with salt and pepper. Saute and cook for 15 minutes on low heat.

Add tomatillos mixture and sausage to a food processor and, using a pulsing motion, chop until all ingredients are mixed but not pureed.

In a medium-sized bowl, add cream cheese, cranberries, sausage/tomatillo mixture and shredded cheese, and mix well.

Meanwhile, cook the bacon in a saute pan or oven for a few minutes until it starts to lightly brown, but not crisp. Drain on paper towel and let cool.

ut the jalapenos in half and remove all of the seeds and white membrane. Using a spoon or piping bag, fill the pepper halves with the mixture.

Wrap each jalapeno half in one piece of bacon. Secure with a toothpick. Place on a baking sheet and bake in a preheated 375 degree oven for 15 minutes.

Set the oven to broil and cook for 2 minutes watching carefully to make sure they don’t burn. This will give the peppers a caramelized flavour and ensures the bacon will be crisp.
