Chase away winter blues with cheese making

Naomi Fournier offers classes in making cheese at Birdsong Farm in Enderby

Are you looking to chase away the winter blues?

If you love cheese, you might want to check out the two winter cheese making classes that Birdsong Farm in Enderby is offering in February and March.

The first class, Mozzarella & More, is scheduled for Feb. 22 from 1 p.m. to 4 p.m., and the second class, Feta & Fun, is March 22 from 1 p.m. to 4 p.m.

In the Mozzarella classes, you will learn how to make mozzarella, squeak cheese (aka cheese curds or curds and whey), and traditional ricotta, while in the Feta classes you will learn how to make feta, paneer and queso blanco. These recipes were chosen because they are easy to make in your own kitchen, and you will bring home a handout with the recipes.

The classes cost $50 each, and both take place at Birdsong Farm in Enderby. A special 10 per cent early bird discount ($5 off) is being offered for Feta class registrations received before Feb. 22.
