Halibut in leek sauce

This is our favourite recipe for halibut. The colour and delicate flavour of leeks enhance the equally delicate flavour of the halibut which results in an attractive and tasty dish.

 

Serves 4

 

Sauce:

1/2 lb. leeks, cleaned and cut into chunks

2 large sprigs of parsley, chopped

1/4 teaspoon salt

1/2 teaspoon lemon juice

sprinkle of pepper

2 cups chicken stock

1/4 cup milk

2 tablespoons flour

 

Bring leeks, parsley, salt, pepper, lemon juice and chicken stock just to the boil and simmer gently 20 – 25 minutes. Start cooking the halibut.

1 tablespoon cooking oil

1 teaspoon finely chopped onion

4 halibut steaks

1 tablespoon lemon juice

sprinkle of salt

 

Heat the oil in a baking dish just large enough to hold the fish without overlapping. Add onion and cook a couple of minutes longer.

Lay fish steaks on top of the onion, pour on lemon juice and sprinkle with salt.

Bake 20 minutes in a 350F oven.

Just before fish is cooked, finish the sauce. Add a little of the milk to the flour, mix well, then add the rest of the milk and again mix well. Slowly pour this into the leek mixture, stirring constantly.

Cook slowly 5-6  minutes. Pour over the fish and serve on heated plates.
