NIC’s Third Course Bistro open once again

Student-run restaurant features amazing fall menu.

NIC’s student run-restaurant at the Campbell River campus opens Oct. 21 with delicious three-course meals.

Reservations are recommended.

“It’s been an exciting fall in the NIC kitchens,” says instructor Pedro Caraballo Acosta. “NIC’s tourism and hospitality students have been bringing their cooking skills to life for the dining room opening. It’s amazing to see their growth and success.”

The appetizers are a choice between Italian bruschetta with shaved parmesan and a balsamic reduction, or garlic shrimp with tomato salso and fresh herbs.

For those who choose to order a soup, the students are serving up butternut squash or Manhattan clam chowder.

On the other hand the salads are either a signature caesar or a mixed greens with Italian vinaigrette.

The entrees are either vegetarian enchiladas, roasted chicken with lemon caper cream sauce, blackened salmon with a maple glaze or a grilled New York steak with mushroom demi glace.

For dessert, try a classic crème caramel, decadent dark chocolate mousse, strawberry coulis panna cotta or coconut and white chocolate ganache bread pudding.

But act quickly, the bistro is open four Fridays this fall and seating is extremely limited. It opens Fridays from 5 to 8 pm, starting Oct 21 and continues Oct. 28, Nov 4 and Nov 25.
