Blueberry Muffins
I saw some fresh blueberries while shopping and thought it would be nice to make some muffins. Frozen berries can also be used, just don’t thaw them before adding to the batter.
1 cup minus 1 tablespoon soured milk or buttermilk
1 tablespoon molasses
1 egg
2 tablespoons cooking oil
1 cup bran
1 cup all purpose flour
1/4 cup wheat germ
1 cup brown sugar
1 teaspoon salt
1 teaspoon baking soda
1 cup blueberries
Beat together 1 egg, milk, molasses and oil. In another bowl mix well bran, flour, salt, soda, wheat germ and brown sugar. Pour liquid into dry ingredients, stirring only until well blended. Add blueberries and stir in. Spoon into paper lined muffin cups and bake in a 375F oven about 20 minutes. Makes 12 muffins.
