Feast your eyes on this: This giant slab of steak was up for judging late Saturday afternoon, during last weekend’s Canadian BBQ and Chili Festival at the Cascades Casino parking lot. Competitors cooked up Texas style chili, burgers, “mystery†proteins, and barbecued pork shoulder, beef brisket, chicken, and pork ribs. Their goal was to qualify for higher level events such as the Jack Daniels Invitational Barbecue in Lynchburg, Tenn., the American Royal in Kansas City, and The World Food Championships in Orlando, Fla.
