Why do farmers water crops in middle of day?

I am a residential citizen in Cobble Hill who certainly supports water restrictions during these very hot and terribly dry weather conditions.

But one thing I do not understand is why I see so many of our rural farmers watering their crops during the heat of the day. How is this efficient and economical when they could be doing it during the night when the sun has set and the temperatures are much cooler? They are drawing water from the same aquifers as I am, and I use a lot less water than they do as do my neighbours.
